Poached Pears
A comforting dessert for cold autumn and winter evenings. Not only do they look beautiful on the plate, they also very easy to prepare.
Serves 4
INGREDIENTS
For the pears:
4 ripe pears
1.5 L water
120 g brown sugar
1 tablespoon of cardamom pods (or 1 cinnamon stick)
2 vanilla pod, cut in half
1 lemon
For the sauce:
100 g dark chocolate
100 ml water
2 tablespoons unsalted butter
a pinch of salt
a teaspoon of brown sugar
25 g dark cocoa powder
PREPARATION
1. Cut the vanilla pod in half, scrape it out and put water, sugar, cardamom and vanilla to a boil, in a stainless steel saucepan.
2. In the meantime peel the pears and add them to the pan, together with a tablespoon of freshly squeezed lemon juice.
3. Now reduce the heat and let the pears simmer until soft and tender, for about 15–20 minutes.
4. When they are soft enough, remove the pan from the heat and allow the pears to cool for a bit in the liquid.
5. Melt the dark chocolate in a water bath, add butter, sugar, stir, and then add a tablespoon of water and a sip of oat milk. Continue stiring until you get a smooth and creamy chocolate sauce.
6. Pour 2 tablespoons of the sauce onto a plate and carefully place the poached pear on top.
